We invite you to share your knowledge with our students. We will have opportunities available for qualified personnel to teach both in our kitchens and classrooms.
If you own or manage a local restaurant, we need you – and you need skilled employees! Contact us to set up a referral program for students that have completed training.
Do you know business? Do you know people? Help a team member grow. We will pair you with a student so that you may assist in their transition from the training center to the workforce.

WHO'S BEHIND ST. PETE CULINARY CENTER

Ted was raised in the kitchens of family owned restaurants. After graduating from Le Cordon Blue, he launched his career at Mise en Place. He moved up to Executive Sous Chef at Chez Bryce and eventually went on to develop menus for Ciro’s Speakeasy & Supper Club, Boca Kitchen Bar & Market, and Copperfish Seafood Grill & Oyster Bar. Prior to striking out on his own, Chef Ted oversaw all dining and bar facilities at Hotel Zamora including the revered Castile Restaurant. In 2015, he partnered with Jason and brought The Mill to life.

Lyndsey Shaw is a Saint Petersburg native with a heart for philanthropy. She spent five years as an active member of the Junior League of St. Pete (JLSP), where she primarily worked on the Care Fair committee, ultimately serving as chair of the organization’s largest community event. Lyndsey’s JLSP commitments also afforded the opportunity to volunteer with many other local community organizations such as Clothes to Kids, Brookwood Florida, Alpha House, Heart Gallery and many more. In addition to her time spent in JLSP, Lyndsey served as a Hospice patient/family volunteer for three years, and received training in the Hospice Speakers Guild. Prior to the birth of her daughter, Lyndsey worked with Pinstripe Marketing as a Senior Project Manager. While serving in this capacity, she was able to lend her professional skills to many local non-profit organizations such as Davin Joseph Foundation, Lupus Foundation of Florida, Southeastern Guide Dogs, SPCA Tampa Bay, and on a national scale the East-West Shrine Game. Lyndsey earned her BS in Marketing from the University of South Florida, and currently attends Stetson University College of Law.

Jason has been involved in restaurants since the age of 12. He expanded his skill while working for the great OSI restaurant powerhouse. It was there he discovered his true passion for the service industry and made it his career. After OSI Jason partnered with a group that developed gourmet pizza establishments, on a chance encounter he met the highly esteemed Chef Ted Dorsey and they immediately formed the D&G Restaurant Group. The two have worked tirelessly to introduce their first of many concepts, The Mill Restaurant. Jason is a firm believer in “Doing it Well is Better Than Well Said.”BF

Patrick "PT" Collins is a serial entrepreneur, having created multiple businesses and brings a wealth of knowledge in start-up procedures and operations. PT has been intricately involved with the food and hospitality industries his entire life and has founded businesses revolving around wine, another in the wholesale and retail seafood industries and most recently opened Deuces BBQ in St. Petersburg, now the top-rated BBQ restaurant in the city. PT loves to travel, especially for food and wine, appreciates spending time with great friends and also enjoys hunting and fishing for his dinner.

Dr. Lynch has an extensive academic and professional portfolio that reflects experience and lifelong learning. He has earned degrees in Organizational Leadership (DM), Food Law (LLM), Hospitality Management (MS) and Hotel and Restaurant Management (BS). He has taught at University of Florida, University of New Orleans, Miami International University of Art and Design and South University.His professional credentials include Certified Executive Chef, Certified Culinary Administrator, and Certified Food Service Professional. Additionally he has worked in hotels, restaurants, casinos throughout the United States, Mexico, and the EU.
